A Tasty Way To Round Out The Year



w/ Sweet Potato Brie Ravioli in a Honeyed Brown Butter Sauce

I always get the urge to do a little bit of "spring" cleaning around the New Year. Whether it be personally, emotionally, or physically. This year, my refrigerator was the lucky winner of my manic cleaning attention. While I was in there, I realized that I had a lot of scraps of leftovers but not enough of each dish to make a real meal so I had to get creative. Hello ravioli, perfect conduit for me to cram a bunch of random stuff into! This ravioli should probably be renamed The Kitchen Sink Ravioli because every scrap I could find went in these puppies. From the random hunks of cheese scavenged in the cheese drawer to literally scraping the filling out of my failed party galettes (had a wee incident with the salt in the crust; completely inedible but I can't throw food away). Thus these babies were born.



Ingredients
Ravioli
  • 2 cups flour
  • 3 eggs
  • 2 Tbsp

Filling
  • roasted sweet potatoes 
  • caramelized onions
  • coconut creamed spinach
  • brie cheese
Sauce
  • 3 Tbsp butter (yikes!!!)
  • a pinch of salt & pepper
  • 1 tsp honey
